The first annual Colville Rotary First International Chili Cook-Off is right around the corner, Saturday, Sept. 21 at the NE WA Fairgrounds from noon to 6 p.m.
Several popular and familiar local names and chefs will concoct their favorite chili recipes for the contest.
Attendees at the contest might recognize James Norris, chef at Maverick’s Restaurant in Colville, because of his volunteer work during the restaurant’s free Thanksgiving dinner for the community.
Last year, the restaurant’s doors opened early at l0 a.m. to serve the growing crowd, which eventually was 480 persons and all the food had been donated.
Chef James likes to make a bold dish with lots of meat and spices. Off duty, he likes fishing, gardening, and, of course, cooking.
Kimo Morrison of Brown Boys Island Barbecue, also well- known in the community, has been working for more than 25 years in restaurants all over the country. Although the restaurant burned recently and the famed chili recipe was lost in the ashes, an even better chili recipe has been created, Morrison says.
Lori Roberts of Catering to You has catered many events around eastern Washington, from Grange food bank fundraisers to private parties and weddings. She’ll be serving what she calls “a well-rounded chili that’s very filling.” She will have her homemade ice cream on sale at the Cook-Off.
