Colville resident Isabella Bitzan announced plans to open a new mobile coffee truck, Bella’s Brews, serving the Colville community beginning in November. Bitzan said her decision to open a cafe on wheels over a stationary location was based on her desire to have the flexibility to appear at local farmers markets, events, and popup locations. With its bright pink hue – a color Bitzan believes truly fits her – she hopes the truck will stand out and become recognizable in the community. When the Bella’s Brews coffee truck is not participating in community gatherings, it can be found at the Streets Eats Food Truck/Food Court area, at 657 W 8th Ave., in Colville. Looking forward, Bitzan is not opposed to exchanging the mobile truck for a traditional storefront, stating, “I’m open to growth if the right opportunity comes along, and if that eventually brings a storefront, I’d be incredibly grateful.

This is not Bitzan’s first venture into the world of business. The sole proprietor of Bella Rose Photography, based in Stevens County, Bitzan said she considers herself a lifestyle photographer who specializes in natural poses and settings that tell a story over more traditional poses and photography. Bitzan credited photography for introducing her to many people who she now considers close friends. Combining both her passions and previous experiences, Bitzan said, “It has given me the confidence and experience to take this next step in starting a coffee business.”

Bitzan said she is committed to managing both her photography business and Bella’s Brews. As a specialty coffee connoisseur, Bitzan said her coffee knowledge was acquired from previous experiences working at local cafes like Ritzes and Stompin’ Groundz.

Bitzan shared she has been developing an extensive menu to accompany her coffee offerings, featuring weekly specials alongside three signature fall drinks. Customers could also expect energy drinks, wraps, sandwiches, pastries, and cookie butter parfaits, one of Bitzan’s favorite culinary confections, and other seasonal foods. “I’ve always loved trying new flavors and getting creative with drinks and food. A lot of my menu reflects things I personally enjoy, but I also want to create a menu with a fun variety of options with a little something for everyone.”

Bitzan said she plans to sell merchandise that reflects the mobile coffee truck culture such as reusable cups, tumblers, and apparel. She added that she is open to catering, private events, and pop-ups, and welcomes community input on viral trends and flavors to provide a “fun, groovy, and welcoming” culinary experience.

Before serving her first cup, Bitzan said the mobile truck must be inspected to receive a Department of Labor & Industries (L&I) certification to ensure the physical safety of the truck, and a Health Department certificate that proves the food and coffee are safe for human consumption. “After that, it will be ‘go time.’ I’m going to do a soft launch with close friends and family to get a little practice, and then I’ll post the dates for the grand opening at Street Eats.”

Bitzan said she was born in Hawaii and that her family moved to Kettle Falls when Bitzan was 5 years old to be closer to family. Now raising her 8-year-old son, Jaxon, in her childhood community, Bitzan is actively building his future. “He ( Jaxon) is my entire world, and everything I do, I do for him and his future.”

Bitzan credits her successful journey to open a coffee business to her family members, good role models, friends, and the support of her community. “The whole process has been so much fun, especially bouncing ideas off close family and friends. I have generally enjoyed every second of it, and having their love and support through this journey has meant everything.”
